    Pad-Day

    notes: this is not Pad Thai, but Pad Day(euh)

    Ingredients
    1 egg (and 1 additional egg for serving)
    6-8 oz flat rice noodles
    onion - finely chopped
    garlic - crushed and chopped
    chilli (dry or powder)
    salt
    pepper
    fish sauce
    sweet soysauce
    1/4 cup meat (beef or chicken), cut into cubes or mixed seafood
    1/4 cup shrimps
    2-3 spoons cooking oil
    1/4 cup bean sprout
    3-4 spoons lemon juice (from half of lemon)
    1-2 spoons sugar (or 2 cubes)
    green onion - coarsely chopped
    shallots - finely chopped, fried

    Instructions
    Soak the rice noodles in cold water until soft (+/- 30 minutes). Drain, set aside.
    Heat a large skillet until hot. Add the oil. Add the garlic, onion, shrimp/meat/seafood. Stir fry together (you can also add your choices of veggies or tofu, if you like).
    Add eggs. Stir again.
    Add the noodles and stir-fry until translucent.
    Add fish sauce, salt, pepper, lemon juice, and sugar.
    Add sweet soya-sauce and chilli powder.
    Pour bean sprout and stir quickly (if you want to omit bean sprout, it is ok).

    To serve:
    Place on a serving dish. You can put peanuts/bean sprout (Thai style). You can also put a flat fried egg on top. Garnished with chopped green onion, fried chopped shallots, and tomato slices (Dayeuh style).
